Hot and sour aubergine

Low protein recipes  - Hot and sour aubergine
  • 1 tbsp Oil
  • ½ Red onion, peeled and sliced
  • 1 Aubergine, chopped
  • 1 Pak choi, chopped
  • 1 Red chilli, deseeded and thinly sliced
  • 1 tbsp Caster sugar
  • 4 tbsp Red wine vinegar
  • 1 tbsp Permitted soy sauce
  • 3 tsp Cornflour
  1. Heat the oil in a large frying pan over a medium heat.
  2. Add the onion, aubergine and pak choi to the pan and fry for 10 minutes or until soft.
  3. Add the chilli to the pan and cook for another minute.
  4. In a separate bowl, mix the sugar, red wine vinegar, soy sauce and cornflour.
  5. Add this mixture to the pan and stir through. Allow to cook for a further 2 minutes and serve.
